Kanaya Midori Japanese Black Tea
This creamy and smooth black tea comes from Hiroki Matsumoto in Shizuoka, Japan, and is made from the Kanaya Midori cultivar. While Yabukita dominates Japanese tea production, Kanaya Midori is a rare cross between Yabukita and Shizuoka Zairai #16 that has been used in high end sencha and even gyokuro. The name itself carries history: “Kanaya” refers to the region, now part of the larger city of Shimada, and “Midori” means green.
The result is a black tea with a creamy, softly milky texture and flavor that sets it apart from other Japanese black teas and black teas in general. A true expression of cultivar character and Matsumoto’s careful craftsmanship.
This tea can be enjoyed with cooler water and shorter steeps or at boiling and a full 5 minutes. Adjust as you go and find how you most prefer it.
